Organizations Filed Purposes: To empower each of us to take ownership in the food cycle to restore our earth, our communities, and ourselves.

Through our direct efforts and in partnership with other organizations, we were able to rescue a total of 582,000 lbs of food in 2020. Each day the Ft Collins Vindeket Foods Market was open we were able to serve an average of 375 people. (mouths fed) 2020 was full of challenges and successes. None was greater than the transition from Serve 6.8 to an independent 501(c)(3) nonprofit corporation. One major takeaway from this experience was: Vindeket's community was robust, self-sacrificing, and incredibly quick to act. Moving the shop over the course of two days and not missing a market day was nothing short of astonishing. Completing this move during a pandemic while providing a safe environment for the community and honoring the county' guidelines was a task the whole Vindeket community can be proud of. The Vindeket transition from some volunteers serving a community, within the Serve 6.8 umbrella, to a community serving a community is an evolution that will continue into 2021 and will be both a source of challenge and great strength. As we align with our mission to reduce food waste and transform the definition of "worth and worthless", in our community, it has become more evident that it is not only those who function in the distribution and reclamation of food who are volunteers but also those who are volunteering their time to pick up the food, take it home, and consume it. Throughout COVID-19, many residents in Fort Collins who were already low-income or on the edge of poverty found themselves unable to meet their basic needs. Not only were we able to meet those needs at our twice-weekly grocery market we also work directly with and provide rescued food to various nonprofit organizations in town that are most proximate to vulnerable families and individuals, such as the Rescue Mission, Catholic Charities, the Salvation Army, Matthew's House, Serve 6.8, and Genesis Project Community. All of these organizations come to Vindeket weekly; Andy from Matthew's House expressed that the students he works with are really happy to have fun, delicious, and unique snacks to enjoy during programs.
